Ingredients
4 oz 50% RUBY Beet Syrup: The high natural sugar content provides the perfect base for a thick, glossy reduction.
2 oz Aged Balsamic Vinegar: For acidity and depth.
1 tbsp Dijon Mustard: To emulsify the glaze and add a slight peppery bite.
1 Clove Garlic, Smashed: To infuse the glaze with savory aromatics.
1 Sprig of Fresh Thyme or Rosemary: To add earthy, woodsy notes.
Black Peppercorns: Coarsely cracked for texture and heat.
Instructions
Combine: In a small saucepan, whisk together the 50% RUBY Beet Syrup, balsamic vinegar, and Dijon mustard.
Infuse: Add the smashed garlic clove and the herb sprig.
Simmer: Place over medium-low heat. Bring to a very gentle simmer, stirring occasionally. Do not let it reach a hard boil, as you want to preserve the vibrant ruby color.
Reduce: Simmer for 8–10 minutes until the liquid has reduced by about a third and coats the back of a spoon.
Finish: Strain out the garlic and herbs. Stir in the cracked black pepper.
Apply: Use a brush to apply to roasted root vegetables, grilled lamb chops, or a side of salmon during the last 5 minutes of cooking for perfect caramelization.
